Ingredients

• 60ml IESSI Aperitivo
• 20ml lemon juice, strained
• 10ml egg white
• 500g red berries
• 2 tablespoons white sugar
• 10ml simple syrup
• Fresh lime
• Salt
• Red fruit powder

Coulis (for about 10 cocktails)

Blend the red berries, the sugar and a squeeze of lime in a bowl. Once the mixture is liquid, chill.

1 - Add IESSI Aperitivo, the lemon juice, the egg white, 15ml of the red fruit coulis, the simple syrup and a pinch of salt (optional) into a shaker

2 - Dry shake without ice for ten seconds

3 - Add ice and shake again for ten seconds

4 - Pour in a coupe glass

5 - Sprinkle red fruit powder over the foam
